Ingredients

  • 5 oz ground chicken
  • 4 large butter lettuce leaves
  • 1/2 cup finely chopped cremini mushrooms
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp soy sauce (low sodium)
  • 1 tsp toasted sesame oil
  • 1 tsp sriracha
  • 1 tsp coconut oil

Instructions

  1. Heat coconut oil in a skillet over medium-high heat.
  2. Add ground chicken and break it apart with a spoon. Cook 3 minutes until no longer pink.
  3. Add mushrooms, garlic, and ginger. Cook 3 minutes until mushrooms soften.
  4. Stir in soy sauce, sesame oil, and sriracha. Cook 1 minute until the sauce coats the chicken.
  5. Remove from heat and fold in most of the green onions, reserving some for garnish.
  6. Spoon the chicken mixture into the butter lettuce leaves.
  7. Top with reserved green onions and serve immediately.
