Light Japchae
A lighter Korean glass-noodle stir-fry tossed with seasoned vegetables and a sweet-sesame sauce. The chewy noodles are satisfying while the veg keeps it fresh.
Ingredients
- 2 oz dry sweet potato glass noodles (dangmyeon)
- 1 cup spinach, blanched
- 1/2 cup carrot, julienned
- 1/2 cup shiitake mushrooms, sliced
- 1/2 cup onion, sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp sugar
- 1 clove garlic, minced
- 1 tbsp sesame seeds
Instructions
- Boil the glass noodles per package directions, then rinse and drain.
- Saute the carrot, mushrooms, and onion separately until just tender, seasoning lightly.
- Squeeze excess water from the blanched spinach.
- Whisk the soy sauce, sesame oil, sugar, and garlic to make the sauce.
- Toss the noodles with the sauce in a large pan over low heat.
- Fold in all the cooked vegetables and toss until glossy.
- Sprinkle with sesame seeds and serve warm or at room temperature.
