Light Bibimbap
A lighter take on the Korean mixed-rice bowl, topped with a rainbow of seasoned vegetables, a fried egg, and a dab of spicy gochujang. It is vibrant, vegetable-forward, and deeply satisfying.
Ingredients
- 1 cup cooked brown rice
- 1 cup spinach, blanched
- 1/2 cup carrot, julienned
- 1/2 cup mushrooms, sliced
- 1 cup bok choy, chopped
- 1 large egg
- 1 tbsp gochujang
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 clove garlic, minced
- 1 tsp sesame seeds
Instructions
- Cook the brown rice and keep it warm.
- Saute the carrots for 2 minutes and set aside; repeat with mushrooms, bok choy, and spinach, seasoning each lightly.
- Mix the garlic, soy sauce, and sesame oil to season the vegetables.
- Fry the egg sunny-side up in a lightly oiled pan.
- Mound the rice in a bowl and arrange the vegetables in sections on top.
- Place the fried egg in the center and add a spoonful of gochujang.
- Sprinkle with sesame seeds and mix everything together before eating.
