Ingredients

  • 2 cups cauliflower florets
  • 1 carrot, diced

  • 2 tbsp unsweetened almond milk

Instructions

  1. Steam cauliflower for 10 minutes until very tender, then mash with almond milk and a pinch of salt. Set aside.
  2. Heat olive oil in a skillet over medium heat. Sauté onion, carrot, and celery for 5 minutes.
  3. Add mushrooms and cook 4 minutes until they release their moisture.
  4. Stir in tomato paste and thyme, cooking 1 minute to deepen the flavor.
  5. Add cooked lentils and vegetable broth. Simmer 5-7 minutes until thickened. Season with salt and pepper.
  6. Transfer the lentil mixture to a small ovenproof dish and spread the cauliflower mash on top.
  7. Bake at 400°F for 15 minutes until the top is lightly golden. Serve hot.
