Healthy Whole Grain Stuffing
Stuffing is the soul of Thanksgiving, but the traditional loaf-based version loaded with a stick of butter can run 350+ calories a scoop. This lighter take uses toasted whole grain bread for fiber, plenty of celery and onion for volume, and a fraction of the fat - olive oil plus broth - to keep it moist. At 180 calories it still tastes like the holiday classic.
Ingredients
- 8 cups whole grain bread, cut into 1/2-inch cubes (about 10 oz)
- 2 cups celery, diced
- 1 large onion, diced
- 2 tbsp olive oil
- 1.5 cups low-sodium vegetable broth
- 1 tbsp fresh sage, chopped
- 1 tbsp fresh thyme leaves
- 1 large egg, beaten
- 1/2 tsp salt and 1/4 tsp black pepper
Instructions
- Preheat the oven to 300°F (150°C) and spread the bread cubes on a baking sheet.
- Toast the bread 15-20 minutes until dry and lightly golden, stirring once; increase oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat and saute the onion and celery 6-8 minutes until softened.
- Stir in the sage and thyme and cook 1 minute until fragrant.
- Combine the toasted bread and vegetables in a large bowl; whisk the broth, egg, salt, and pepper together and pour over, tossing to coat evenly.
- Transfer to a greased 9x13 baking dish and cover with foil.
- Bake 25 minutes covered, then uncover and bake 15 minutes more until the top is crisp and golden.
- Rest 5 minutes before serving.
