Ingredients

  • 1 medium sweet potato, diced small
  • 3 oz lean ground beef (90% lean)
  • 1/2 cup diced bell pepper

Instructions

  1. Microwave the diced sweet potato with a splash of water for 3 minutes to soften. Drain.
  2. Heat olive oil in a skillet over medium heat. Add sweet potato and cook 6 minutes until starting to crisp, stirring occasionally.
  3. Add ground beef, breaking it up with a spoon. Cook 4 minutes until browned.
  4. Stir in onion, bell pepper, and garlic. Cook 4 minutes until vegetables soften.
  5. Season with smoked paprika, salt, and pepper. Spread the hash evenly in the pan.
  6. Crack the egg on top, cover, and cook 3-4 minutes until the white sets and the yolk is runny.
  7. Garnish with scallions and serve hot.
