Shakshuka (Middle Eastern Eggs in Spiced Tomato)

Eggs gently poached in a simmering, spiced tomato and bell pepper sauce make a warming brunch that’s high in protein and naturally gluten-free. A single skillet does all the work.

Ingredients

  • 2 large eggs
  • 1 cup diced tomatoes (canned or fresh)
  • 1 medium bell pepper, chopped
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp chili flakes
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a medium skillet over medium heat.
  2. Sauté onion and bell pepper for 5 minutes until softened.
  3. Add garlic, cumin, paprika, and chili flakes. Cook 1 minute until fragrant.
  4. Stir in tomatoes and tomato paste. Simmer 8-10 minutes until thickened.
  5. Make two wells in the sauce and crack an egg into each.
  6. Cover and cook 5-7 minutes until whites set but yolks are soft.
  7. Season with salt and pepper and serve hot, scooping sauce over the eggs.
