This one-pot pasta primavera lets the noodles cook right in vegetable broth with a rainbow of vegetables, creating its own light sauce with no separate pot to wash. It is a fresh vegetarian dinner ready in under 30 minutes.

Ingredients

  • 8 oz whole wheat penne pasta
  • 3 cups low-sodium vegetable broth
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 3 cloves garlic, minced
  • 3 tbsp grated Parmesan cheese
  • 1 tbsp olive oil
  • 2 tbsp fresh basil, chopped

Instructions

  1. Heat the olive oil in a large pot or deep skillet over medium heat.
  2. Add the garlic, zucchini, bell pepper, and carrot and sauté 3 minutes.
  3. Add the dry pasta, broth, and a pinch of salt; stir well to combine.
  4. Bring to a boil, then reduce to a vigorous simmer.
  5. Cover and cook 12-14 minutes, stirring every few minutes, until the pasta is al dente and liquid mostly absorbs.
  6. Stir in the peas during the last 2 minutes to warm through.
  7. Remove from heat, fold in the Parmesan and basil, and serve immediately.
