Mushroom Swiss Cheese Meltdown

Portobello mushrooms have a meaty, umami flavor that makes them perfect for a main dish. Paired with melty Swiss cheese and peppery arugula, this feels like a restaurant-quality meal that’s surprisingly low-calorie.

Ingredients

  • 2 large portobello mushrooms
  • 2 slices Swiss cheese
  • 1 cup fresh arugula
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • Balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Brush mushrooms with olive oil and season with salt and pepper.

  3. Roast mushrooms gill-side down for 5 minutes.

  4. Flip, add garlic between caps, and roast 5 more minutes.
