Chicken Shawarma Bowl

All the flavor of chicken shawarma in a lighter bowl: spiced grilled chicken over crisp greens with pickled onion and a creamy tahini-lemon drizzle.

Ingredients

  • 6 oz boneless skinless chicken breast, sliced
  • 3 cups chopped romaine lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/2 medium cucumber, diced
  • 1/4 medium red onion, thinly sliced (pickled)
  • 1 tbsp tahini
  • 1 tbsp lemon juice
  • 2 tbsp plain Greek yogurt
  • 1 tsp shawarma spice blend (or cumin + paprika + coriander)
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Toss chicken with olive oil, shawarma spice, salt, and pepper. Marinate 15 minutes.
  2. Pickle red onion in 2 tbsp lemon juice and a pinch of salt while chicken rests.
  3. Heat a skillet over medium-high. Cook chicken 4-5 minutes per side until done (165 F).
  4. Whisk tahini, Greek yogurt, lemon juice, and 1 tbsp water into a drizzle.
  5. Arrange romaine, tomatoes, and cucumber in a bowl.
  6. Slice chicken and place on top. Add pickled onion.
  7. Drizzle with tahini sauce and serve.
