Zucchini boats are a fun way to eat more vegetables. The zucchini becomes a edible bowl for seasoned ground turkey, making this a low-carb dinner that’s both satisfying and visually appealing.

Ingredients

  • 1 medium zucchini
  • 100g ground turkey
  • ½ cup tomatoes, diced
  • ¼ onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Cut zucchini in half lengthwise. Scoop out seeds to create boats.
