Ingredients
- 2 whole wheat lasagna noodles
- 1 zucchini, sliced lengthwise
- 1 cup fresh spinach
- 1/4 cup part-skim ricotta
- 1/4 cup marinara sauce
- 2 tbsp shredded mozzarella
- 1 tbsp Parmesan
- 1/4 tsp Italian seasoning
Instructions
- Preheat oven to 375°F. Cook noodles.
- Saute zucchini 2 minutes per side. Pat dry.
- Mix ricotta with Italian seasoning.
- Layer in a baking dish: sauce, noodle, zucchini, spinach, ricotta, noodle, sauce, mozzarella.
- Bake 25-30 minutes until bubbly.
