Vegetable Lasagna

A lighter lasagna using zucchini slices alongside pasta for volume with fewer carbs.

Ingredients

  • 2 whole wheat lasagna noodles
  • 1 zucchini, sliced lengthwise
  • 1 cup fresh spinach
  • 1/4 cup part-skim ricotta
  • 1/4 cup marinara sauce
  • 2 tbsp shredded mozzarella
  • 1 tbsp Parmesan
  • 1/4 tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F. Cook noodles.
  2. Saute zucchini 2 minutes per side. Pat dry.
  3. Mix ricotta with Italian seasoning.
  4. Layer in a baking dish: sauce, noodle, zucchini, spinach, ricotta, noodle, sauce, mozzarella.
  5. Bake 25-30 minutes until bubbly.
