A slimmed-down version of Korea’s beloved spicy rice cake street snack, simmered in a lighter gochujang sauce with napa cabbage. It keeps the signature chew and kick without the heavy oil.

Ingredients

  • 6 oz Korean rice cakes (tteok)
  • 2 tbsp gochujang
  • 1 tsp gochugaru
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 2 cloves garlic, minced
  • 1 cup napa cabbage, chopped
  • 2 tbsp scallions, sliced
  • 1 tsp sesame seeds
  • 1.5 cups water

Instructions

  1. Soak the rice cakes in warm water for 10 minutes if they are hard.
  2. Combine the gochujang, gochugaru, soy sauce, sugar, and garlic in a small bowl.
  3. Bring the water to a simmer in a skillet and whisk in the sauce mixture.
  4. Add the rice cakes and cook, stirring often, for 8 minutes until tender and the sauce thickens.
  5. Stir in the napa cabbage for the last 2 minutes.
  6. Finish with scallions and sesame seeds.
