Steak and Potato

Ingredients
- 1 cup lean sirloin beef, cut into a steak
- 1 cup russet potato, scrubbed
- 2 tbsp sour cream
- 1 tbsp unsalted butter
- 1 tsp fresh rosemary, chopped
- 1 clove garlic, smashed
- 1 scallion, sliced
- 1 tbsp olive oil
- Salt and black pepper to taste
Instructions
- Take the steak out of the fridge 20 minutes ahead so it comes to room temperature.
- Rub the potato with olive oil and a pinch of salt, then bake at 400F for 45 minutes until tender.
- Season the steak generously on both sides with salt and cracked black pepper.
- Heat a cast-iron skillet over high heat until smoking, then sear the steak 3 minutes per side for medium-rare.
- Add butter, rosemary, and the smashed garlic to the pan and baste the steak for 1 minute.
- Rest the steak on a cutting board for 5 minutes while you split the baked potato open.
- Fluff the potato flesh with a fork and dollop with sour cream and scallions.
- Slice the steak against the grain and serve alongside the loaded potato.
