Slow Cooker Pulled Pork

This slow cooker pulled pork uses lean pork tenderloin cooked low and slow until it shreds effortlessly in a smoky homemade barbecue sauce. It feeds a crowd and reheats beautifully for sandwiches all week.

Ingredients

  • 16 oz pork tenderloin, trimmed
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 3 tbsp tomato paste
  • 2 tbsp apple cider vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp smoked paprika
  • Salt and black pepper

Instructions

  1. Layer the sliced onion and garlic in the bottom of the slow cooker.
  2. Season the pork tenderloin with salt, pepper, and half the smoked paprika and place on top of the onions.
  3. Whisk together the tomato paste, vinegar, honey, mustard, and remaining paprika in a bowl.
  4. Pour the sauce over the pork and turn to coat.
  5. Cover and cook on Low for 7-8 hours (or High for 4 hours) until the pork shreds easily.
  6. Transfer the pork to a bowl and shred with two forks.
  7. Stir the shredded pork back into the sauce to coat and serve warm.
