Ingredients

  • 1 cup salmon fillet, skin removed
  • 1 cup arborio rice
  • 4 cups low-sodium vegetable broth
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup asparagus, trimmed and cut into pieces
  • 1 small shallot, finely diced
  • 2 tbsp dry white wine
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1/2 lemon, zested and juiced
  • Salt and black pepper to taste

Instructions

  1. Warm the broth in a small pot and keep it at a gentle simmer.
  2. Season the salmon with salt and pepper and set aside.
  3. Heat olive oil in a wide pan over medium heat and sweat the shallot until translucent.
  4. Toast the arborio rice in the shallot for 1 minute, then deglaze with white wine.
  5. Ladle in the warm broth a half-cup at a time, stirring constantly until each addition is absorbed before adding more.
  6. Stir in the asparagus pieces with the last addition of broth and cook until the rice is creamy and al dente.
  7. Sear the salmon in a separate skillet for 3-4 minutes per side until just cooked through.
  8. Off the heat, fold parmesan, butter, and lemon zest into the risotto, then top with the salmon and a squeeze of lemon.
