No-Bake Energy Bites
Bite-sized energy balls that taste like peanut butter cookie dough but are packed with fiber, healthy fats, and natural sweetness from dates. No baking required — just mix, roll, and chill.
Ingredients
- 1 cup rolled oats
- 1/4 cup natural peanut butter
- 6 Medjool dates, pitted
- 1 tbsp chia seeds
- 2 tbsp water (or almond milk)
- 1 tsp vanilla extract
- A pinch of salt
- Optional: 2 tbsp dark chocolate chips or shredded coconut
Instructions

Soak dates in hot water for 10 minutes to soften (skip if already soft).

Drain dates and add to a food processor with peanut butter, water, vanilla, and salt.

Process until it forms a sticky paste.

Transfer to a bowl and add oats, chia seeds, and optional mix-ins. Stir until well combined.
