No-Bake Energy Bites

Bite-sized energy balls that taste like peanut butter cookie dough but are packed with fiber, healthy fats, and natural sweetness from dates. No baking required — just mix, roll, and chill.

Ingredients

  • 1 cup rolled oats
  • 1/4 cup natural peanut butter
  • 6 Medjool dates, pitted
  • 1 tbsp chia seeds
  • 2 tbsp water (or almond milk)
  • 1 tsp vanilla extract
  • A pinch of salt
  • Optional: 2 tbsp dark chocolate chips or shredded coconut

Instructions

  1. Soak dates in hot water for 10 minutes to soften (skip if already soft).

  2. Drain dates and add to a food processor with peanut butter, water, vanilla, and salt.

  3. Process until it forms a sticky paste.

  4. Transfer to a bowl and add oats, chia seeds, and optional mix-ins. Stir until well combined.

  5. Roll into 10 balls (about 1 inch each) using your hands.

  6. Chill in the refrigerator for at least 30 minutes to set.
