Moroccan Vegetable Tagine
A fragrant North African tagine of sweet potato, carrots, and chickpeas simmered with warm spices. Naturally vegan and loaded with fiber.
Ingredients
- 1 cup cooked chickpeas
- 1 medium sweet potato, cubed
- 2 medium carrots, sliced
- 1 medium onion, chopped
- 1 cup diced tomatoes
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp turmeric
- 2 cups vegetable broth
Instructions
- Heat olive oil in a large pot or tagine over medium heat.
- Add onion and cook 5 minutes until softened.
- Stir in garlic, cumin, cinnamon, ginger, and turmeric. Cook 1 minute.
- Add sweet potato, carrots, chickpeas, tomatoes, and broth. Stir well.
