A lighter take on rich massaman curry, with tender chicken, potato, and peanuts in a fragrant coconut sauce—410 calories and 30g protein per serving.

Ingredients

  • 6 oz chicken breast, cubed
  • 4 oz potato, cubed
  • 1 oz onion, sliced
  • 0.5 cup light coconut milk
  • 1.5 tbsp massaman curry paste
  • 1 tbsp roasted peanuts
  • 1 tbsp fish sauce
  • 1 tbsp fresh lime juice
  • 1 cinnamon stick

Instructions

  1. Heat a pot over medium and bloom the curry paste with 2 tbsp of the coconut milk for 1 minute.
  2. Add chicken and toss to coat in the paste.
  3. Pour in the remaining coconut milk, cinnamon stick, and 0.5 cup water; bring to a simmer.
  4. Add potato and onion; cover and simmer 15 minutes until potato is tender.
  5. Stir in fish sauce and most of the peanuts.
  6. Finish with lime juice and remove the cinnamon stick.
  7. Serve garnished with remaining peanuts over cauliflower rice or a small portion of rice.
