Ingredients

  • 4 large eggs, separated
  • 1/2 cup granulated sugar, divided
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder (plus extra for dusting)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup plain nonfat Greek yogurt
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 10x15 jelly-roll pan with parchment, greasing the paper.
  2. Sift together the flour, 1/3 cup cocoa powder, baking powder, and salt.
  3. Beat the egg yolks with 1/4 cup sugar until thick and pale; fold in the dry ingredients.
  4. In a clean bowl, beat the egg whites to soft peaks, gradually add the remaining 1/4 cup sugar, and beat to stiff glossy peaks; fold into the yolk mixture in three additions.
  5. Spread the batter evenly in the pan and bake 10-12 minutes until the top springs back.
  6. Immediately invert the cake onto a clean towel dusted with cocoa, peel off the parchment, and roll the cake up in the towel from the short end; cool completely on a rack.
  7. Whisk the Greek yogurt, maple syrup, and vanilla until smooth for the filling.
  8. Unroll the cooled cake, spread with the filling, re-roll without the towel, and dust with cocoa. Chill 1 hour before slicing.
