Light Pumpkin Pie

Thanksgiving isn’t complete without pumpkin pie, but a traditional slice can run 300+ calories thanks to heavy cream and sweetened condensed milk. This lighter custard uses low-fat milk, eggs, and a modest amount of maple syrup, spiced generously so each bite tastes rich. At 180 calories per slice, you can have your pie and your goals too.

Ingredients

  • 1 refrigerated 9-inch pie crust (or homemade)
  • 15 oz pumpkin puree (not pumpkin pie filling)
  • 1 cup low-fat milk
  • 2 large eggs
  • 1/3 cup pure maple syrup
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 425°F (220°C) and press the pie crust into a 9-inch pie plate; crimp the edges.
  2. Whisk the pumpkin puree, milk, eggs, maple syrup, pumpkin pie spice, vanilla, and salt in a large bowl until completely smooth.
  3. Pour the filling into the crust.
  4. Bake at 425°F for 15 minutes to set the crust.
  5. Reduce the oven temperature to 350°F (175°C) and bake 35-40 minutes until the center is just set with a slight jiggle.
  6. Transfer to a wire rack and cool completely at room temperature, at least 2 hours.
  7. Refrigerate until ready to serve. Slice into 8 even wedges.
  8. Serve chilled or at room temperature, optionally with a dollop of light whipped topping.
