Light Eggnog

Instructions

- Remove from heat and stir in the vanilla, nutmeg, cinnamon, and rum extract.
- Strain through a fine-mesh sieve into a pitcher to remove any cooked egg bits.
- Chill at least 2 hours until very cold.
- Whisk well before serving to recombine, then pour into cups.
- Garnish with a dusting of fresh nutmeg. Serve chilled.
