Fresh cranberries simmer with orange zest, a cinnamon stick, and just enough maple syrup to tame the tartness - about a quarter of the sugar of traditional recipes. At 60 calories per serving it adds bright flavor to the plate without weighing it down.

Ingredients

  • 12 oz fresh or frozen cranberries
  • 1 orange (zest plus 1/4 cup juice)
  • 1/4 cup pure maple syrup
  • 1/4 cup water
  • 1 cinnamon stick
  • 1 pinch salt

Instructions

  1. Rinse the cranberries and discard any soft or bruised ones.
  2. Combine cranberries, orange juice and zest, maple syrup, water, cinnamon stick, and salt in a medium saucepan.
  3. Bring to a boil over medium-high heat, then reduce to a simmer.
  4. Cook 10-12 minutes, stirring occasionally, until the cranberries burst and the sauce thickens.
  5. Remove from heat and discard the cinnamon stick.
  6. Let cool - the sauce will continue to thicken as it chills.
  7. Refrigerate at least 2 hours before serving. Serve cold or at room temperature.
