Kimchi Stew

A fiery Korean kimchi jjigae built on well-fermented kimchi, lean pork, and soft tofu. The sour-spicy broth is deeply comforting and surprisingly light.

Ingredients

  • 1.5 cups aged kimchi, chopped
  • 4 oz pork loin, sliced thin
  • 4 oz firm tofu, cubed
  • 1/2 cup onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp gochugaru (Korean chili flakes)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cups water
  • 2 tbsp scallions, sliced

Instructions

  1. Saute the onion and pork in sesame oil in a pot for 3 minutes.
  2. Add the chopped kimchi and garlic and cook for 4 minutes until fragrant.
  3. Stir in the gochugaru and soy sauce.
  4. Pour in the water and bring to a boil, then reduce to a simmer.
  5. Simmer for 15 minutes so the broth develops depth.
  6. Add the tofu cubes and warm through for 3 minutes.
  7. Ladle into bowls and top with scallions.
