Ingredients

  • 2 medium zucchini, spiralized
  • 2 slices bacon, chopped
  • 1 whole egg
  • 1 egg yolk
  • 2 tbsp grated parmesan cheese
  • 1 clove garlic, smashed
  • 1/2 tsp freshly cracked black pepper
  • 1 tbsp chopped fresh parsley

Instructions

  1. Spiralize the zucchini into noodles and pat dry with paper towels to remove excess moisture.
  2. Whisk the whole egg, egg yolk, and parmesan in a small bowl. Set aside.
  3. Cook bacon in a skillet over medium heat until crispy, about 5 minutes. Remove with a slotted spoon.
