Ingredients

  • 2 cups green papaya, shredded
  • 1 oz green beans, cut into 1-inch pieces
  • 4 cherry tomatoes, halved

  • 1.5 tbsp fresh lime juice
  • 1 tsp palm sugar
  • 1 tbsp roasted peanuts, crushed

Instructions

  1. Pound the garlic and chili in a mortar to a rough paste.
  2. Add palm sugar, fish sauce, and lime juice; stir until sugar dissolves.
  3. Add green beans and lightly pound to bruise them.
  4. Add shredded papaya and cherry tomatoes; toss and lightly pound to coat.
