Chicken Stir-Fry with Brown Rice

A balanced meal with lean protein, complex carbs, and vegetables. The brown rice provides sustained energy while the chicken delivers 38g of protein.

Ingredients

  • 5 oz chicken breast, sliced thin
  • 1 cup broccoli florets
  • 1/2 bell pepper, sliced
  • 1 cup cooked brown rice
  • 1 tbsp soy sauce (low sodium)
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cornstarch

Instructions

  1. Cook brown rice according to package directions.
  2. Marinate chicken in 1 tsp soy sauce and cornstarch for 5 minutes.
  3. Heat a wok over high heat. Add sesame oil.
  4. Stir-fry chicken for 3-4 minutes until golden. Remove.

  6. Return chicken. Add remaining soy sauce and 2 tbsp water.
  7. Serve over brown rice.
