Chicken and Quinoa Power Bowl

This power bowl is a complete meal with lean protein, complex carbs, and nutrient-dense greens. Perfect for meal prep — make a batch on Sunday and enjoy throughout the week.

Ingredients

  • 150g chicken breast
  • ½ cup cooked quinoa
  • ½ sweet potato, cubed
  • 1 cup kale, chopped
  • 1 tbsp olive oil
  • ¼ lemon (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato cubes with half the olive oil, salt, and pepper. Roast 20-25 minutes.

  2. Season chicken with salt, pepper, and herbs. Grill or pan-fry 5-6 minutes per side until 165°F internal.
