Chicken Quesadilla

A satisfying quesadilla loaded with protein. Using two medium tortillas instead of one large one controls portions.

Ingredients

  • 4 oz chicken breast, cooked and shredded
  • 2 medium flour tortillas (8 inch)
  • 1/3 cup shredded reduced-fat cheddar
  • 1/4 bell pepper, diced
  • 2 tbsp diced onion
  • 1 tbsp salsa
  • Cooking spray

Instructions

  1. Season chicken with cumin and chili powder. Cook and shred.
  2. Saute bell pepper and onion for 3 minutes.
  3. Spray a skillet and place over medium heat.
  4. Place one tortilla in the skillet. Add cheese, chicken, vegetables, and remaining cheese.
  5. Top with second tortilla. Cook 2-3 minutes until golden.
  6. Flip and cook 2 more minutes until crispy.
  7. Cut into wedges and serve with salsa.
