Chicken Enchiladas

A satisfying Mexican dinner with corn tortillas, shredded chicken, and enchilada sauce.

Ingredients

  • 5 oz chicken breast, cooked and shredded
  • 3 corn tortillas
  • 1/2 cup red enchilada sauce (low sodium)
  • 1/4 cup shredded reduced-fat cheddar
  • 2 tbsp diced onion
  • 1/4 cup black beans
  • 1 tbsp Greek yogurt
  • 1 tbsp chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix chicken with onion, black beans, and 2 tbsp enchilada sauce.
  3. Warm tortillas for 20 seconds.
  4. Fill each tortilla and roll up. Place seam-side down in a baking dish.
  5. Pour remaining sauce over top. Sprinkle with cheese.
  6. Bake 15-20 minutes until bubbly.
  7. Garnish with yogurt and cilantro.
