Instructions

- Cook the bacon in a heavy pot over medium heat until crisp; remove and reserve.
- Brown the beef in the bacon fat in batches, 4-5 minutes per batch; transfer to a plate.
- Add olive oil to the pot and saute pearl onions and garlic 3 minutes.
- Stir in tomato paste and thyme; cook 1 minute, then deglaze with red wine, scraping the fond.
- Return the beef and bacon to the pot; add beef broth and bay leaf, bring to a simmer, cover, and braise 45 minutes until tender.
- Melt butter in a skillet and saute mushrooms until golden, about 6 minutes.
- Stir mushrooms into the stew, simmer uncovered 10 minutes to thicken the sauce, and garnish with parsley.
