Avocado Deviled Eggs

A healthier twist on the classic deviled egg. Creamy avocado replaces mayonnaise, adding heart-healthy monounsaturated fats and fiber while keeping the rich, satisfying texture.

Ingredients

  • 4 large eggs
  • ½ ripe avocado
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • Paprika for garnish
  • Fresh chives for garnish

Instructions

  1. Boil eggs: place in a pot, cover with water, bring to a boil, then cover and remove from heat for 12 minutes.

  2. Cool eggs in ice water for 5 minutes, then peel.

  3. Halve eggs lengthwise and remove yolks into a bowl.

  4. Mash yolks with avocado, lemon juice, mustard, garlic powder, salt, and pepper until smooth.

  5. Pipe or spoon the mixture back into egg white halves.

  6. Dust with paprika and garnish with chives.
