Sheet Pan Chicken and Vegetables

Everything roasts together on one sheet pan for crispy-edged chicken, tender potatoes, and charred broccoli with almost no cleanup. It is a balanced, high-protein dinner perfect for meal prep.

Ingredients

  • 8 oz chicken breast, cut into chunks
  • 2 cups broccoli florets
  • 12 oz baby potatoes, halved
  • 1 bell pepper, sliced
  • 1/2 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 lemon, cut into wedges
  • Salt and black pepper

Instructions

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
  2. Toss the potatoes with 1 tbsp olive oil, salt, and pepper and spread on one side of the pan.
  3. Roast the potatoes for 10 minutes to give them a head start.
  4. Toss the chicken, broccoli, bell pepper, and onion with the remaining oil, garlic powder, and smoked paprika.
  5. Add the chicken and vegetables to the sheet pan in a single layer.
  6. Roast everything for 15-18 minutes, stirring once, until the chicken reaches 165°F and vegetables are charred.
  7. Squeeze fresh lemon over the pan and serve hot.
