Sheet Pan Chicken and Vegetables
Everything roasts together on one sheet pan for crispy-edged chicken, tender potatoes, and charred broccoli with almost no cleanup. It is a balanced, high-protein dinner perfect for meal prep.
Ingredients
- 8 oz chicken breast, cut into chunks
- 2 cups broccoli florets
- 12 oz baby potatoes, halved
- 1 bell pepper, sliced
- 1/2 red onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 lemon, cut into wedges
- Salt and black pepper
Instructions
- Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
- Toss the potatoes with 1 tbsp olive oil, salt, and pepper and spread on one side of the pan.
- Roast the potatoes for 10 minutes to give them a head start.
- Toss the chicken, broccoli, bell pepper, and onion with the remaining oil, garlic powder, and smoked paprika.
- Add the chicken and vegetables to the sheet pan in a single layer.
- Roast everything for 15-18 minutes, stirring once, until the chicken reaches 165°F and vegetables are charred.
- Squeeze fresh lemon over the pan and serve hot.
