Salmon Pasta Cream

Whole wheat pasta tossed with flaked salmon in a lemon cream sauce brightened with dill. A comforting Italian-style dinner with 34g of protein in 580 calories.

Ingredients

  • 5 oz salmon fillet, skin removed
  • 1 cup whole wheat penne
  • 2 tbsp heavy cream
  • 1 tbsp lemon juice, plus zest of half a lemon
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tbsp fresh dill, chopped
  • 1 tbsp capers, drained
  • 1/4 cup reserved pasta water
  • 1 tbsp grated Parmesan
  • Salt and black pepper, to taste

Instructions

  1. Boil the penne in well-salted water until al dente, reserving 1/4 cup of the starchy cooking water before draining.
  2. Pat the salmon dry and season with salt and pepper.
  3. Heat the olive oil in a skillet over medium-high heat and sear the salmon for 3-4 minutes per side until just cooked through. Flake into large pieces.
  4. Lower the heat to medium and add the butter and garlic, sautéing for 30 seconds until fragrant.
  5. Pour in the heavy cream and lemon juice, scraping up any browned bits, and simmer for 1-2 minutes until slightly thickened.
  6. Toss the drained pasta in the sauce with the reserved pasta water, capers, and lemon zest until coated.
  7. Fold in the flaked salmon gently so it stays in chunks, then season to taste.
  8. Plate and finish with grated Parmesan and fresh dill.

Tips

  • Reserve the pasta water; its starch is what makes the cream sauce cling to the penne.
  • Fold the salmon in at the end so it stays moist and flaky instead of overcooking.
