Caprese Skewers

Caprese skewers take everything great about a caprese salad and turn it into an elegant, no-fork finger food. Sweet cherry tomatoes, creamy little mozzarella pearls, and fragrant basil threaded onto picks, finished with a drizzle of balsamic glaze - they look fancy but come together in 15 minutes with zero cooking. At just 40 calories each, they’re the lightest, freshest bite on any party table.

Ingredients

  • 24 cherry tomatoes
  • 8 oz fresh mozzarella pearls (mini bocconcini, drained)
  • 24 small fresh basil leaves
  • 2 tbsp balsamic glaze (store-bought or reduced balsamic vinegar)
  • 1 tsp olive oil
  • Flaky salt and freshly cracked black pepper
  • 24 short appetizer skewers or toothpicks

Instructions

  1. Drain the mozzarella pearls well and pat dry with a paper towel so the skewers aren’t slippery.

  2. Thread one cherry tomato, one folded basil leaf, and one mozzarella pearl onto each skewer. Repeat for all 24.

  3. Arrange the finished skewers on a serving platter.

  4. Whisk the balsamic glaze with the olive oil and drizzle lightly over the skewers.

  5. Finish with a pinch of flaky salt and cracked black pepper. Serve at room temperature.

Tips

  • Assemble up to 4 hours ahead, but drizzle the balsamic just before serving so the mozzarella stays bright.
  • If mozzarella pearls are unavailable, cut a fresh mozzarella ball into 24 small cubes.
  • For a heartier version, add a folded piece of prosciutto to each skewer (adds about 20 calories each).
  • Serve alongside hummus or tzatziki for a full Mediterranean appetizer spread.
