A classic dry curry of potatoes and cauliflower tossed with turmeric, cumin, and coriander. This vegan version uses just a touch of oil and lets the vegetables’ natural flavors shine.
Ingredients
- 1 medium potato, diced small
- 2 cups cauliflower florets
- 1/2 medium onion, sliced
- 1 medium tomato, chopped
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp turmeric
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1 tsp olive oil
- 1/2 tsp garam masala
- Salt to taste
- Fresh cilantro to garnish
Instructions
- Parboil the diced potato 3-4 minutes, then drain.
- Heat olive oil in a pan and toast cumin seeds 30 seconds.
- Add onion and cook 3-4 minutes until softened.
- Stir in garlic and ginger and cook 1 minute.
- Add turmeric and coriander and toast 30 seconds.
- Add potato and cauliflower with a splash of water, cover, and cook 8-10 minutes until tender, stirring occasionally.
- Stir in tomato and garam masala and cook uncovered 3-4 minutes until any liquid evaporates.
- Season with salt, garnish with cilantro, and serve.
